King Ranch Chicken
Cook:
1 3-pound chicken
1 onion
1 rib celery
2 1/2 teaspoon of salt
Bone chicken, cut into pieces. Keep 1 1/3 cup of the broth.
Combine and simmer:
1 can cream of chicken soup
2/3 cup canned tomatoes
green chiles as desired
1/2 teaspoon salt
1 1/3 cup broth from cooked chicken
Layer in casserole: chicken, soup and tomato mixture, slices of tortillas, onion, cheese. Cook at 250° for 20 minutes or 200° for 40 minutes.
