Apple Dumpling Delight

8 apples, peeled and cut into quarters and sliced
4 cups flour
2 cups shortening
1 teaspoon salt
1/2 cup ice water
sugar
butter
cinnamon

Make a dough of flour, shortening, salt and ice water. Roll dough thin. Cut into 6-inch round or square pieces. Place 3 apple slices on each pastry piece. Sprinkle with sugar and cinnamon and dot with butter. Press pastry around apples. Place on cookie sheet and bake at 425° for 25 minutes, then reduce heat to 350° for 30 minutes. Pour sauce over each dumpling at serving time.

Sauce: Cream butter and sugar. Add eggs. Cream again. Add half and half and cream again. Cook in double boiler until thick and clear, about 40 minutes. Cool. (You may add 1/4 cup of bourbon if desired)

Additional hot, cooked apple slices can be placed on top of dumpling before serving to add more apple flavor and moistness. Dumplings can be frozen right on cookie sheet, covered with foil. Take out night before and reheat on cookie sheet, still covered with foil at 350° for 20 minutes prior to serving time.
